This Little Goat Went to Belize and Partied With Chicken Thighs

Kinda over cooking? Me too.

Yesterday’s dinner was an everything is going bad we need to cook all the things kinda night, and I was not looking forward to it. Shoot, I wasn’t even in the mood for chicken thighs.

But, I had a light bulb moment & ended up making the easiest dish I’ve made all of quarantine (ONLY 4 INGREDIENTS!) and threw some leftovers together with some brussels & bacon. It really hit the spot. Plus, This Little Goat spices are some of my favorite secret weapons in the kitchen.

THIS LITTLE GOAT WENT TO BELIZE & PARTIED WITH CHICKEN THIGHS

INGREDIENTS -


2 ½ lb boneless, skinless chicken thighs, trimmed
3 tablespoons olive oil
3 tablespoons This Little Goat Went to Belize spice mix
1 lemon


DIRECTIONS -


1. Combine the olive oil & the spice mix in a large bowl and whisk together.
2. Add the chicken thighs and coat evenly.
3. Cover and chill for at least 1 hour and up to 12 hours
4. Adjust the oven rack about 6 inches (15 cm) from the top heat source in your oven, then preheat the broiler (high).
5. Line a baking sheet with foil and a wire rack.
6. Place chicken in single layer on prepared wire rack. Broil until chicken is well browned and registers at least 165˚F (74˚C), about 16-20 minutes. You may need to rotate the sheet pan halfway through if your broiler heats unevenly. Remove and rest the chicken for 5 minutes before handling, and turn off the oven.
7. While chicken rests, squeeze some lemon on top to taste.
